Monitoring Metrics for connector components

We need visibility into the processing of connectors. When monitoring the collector, we want metrics/traces for the connectors. 

**Describe the solution you'd like**
All connectors send Prometheus metrics similar to receivers/exporters. Also adding traces would be great.
