Bug: `prettyInspectOptions` not longer working in 4.10.x

Describe the bug
Since release 4.10.x, the prettyInspectOptions in templates no longer applied it seems. Other options like prettyLogTemplate still work fine, it's just the prettyInspectOptions that seem to be ignored. For example, setting compact or sorted to true no longer has any effect, while it works fine in tslog@4.9.3

@Niek Did you use on node.js? Maybe, _extend function doesn't shallow copy.

Yes. This is on nodejs @0816i - I tired different versions and they all have the same issue.

I think there's an issue where prettyInspectOptions isn't being passed to ctx properly.

It looks like this fix wasn't included in the 4.10.x update.
