Add support for input and data stream identification when sending events

[input](https://github.com/elastic/elastic-agent-shipper/blob/b3436b16b63b35d199bcc6c9f9a1418dd82b0519/api/shipper.proto#L51-L59) and [data stream](https://github.com/elastic/elastic-agent-shipper/blob/b3436b16b63b35d199bcc6c9f9a1418dd82b0519/api/shipper.proto#L61-L68) options should be propagated to the `PublishEvents` call via gRPC.
