Update the quick start quick to remove reference to docker-machine

Docker Machine has been retried -- would it be possible to update the Quick Start based on current tool stack options?

As far I see the Rancher fork of it still alive and actively updated https://github.com/rancher/machine but would be of course good to update docs.
