We should look at tidying up our examples

1. Replace pnpm with npm
2. Consider should we be using the latest version of plugins and WP or should we specify particular versions
3. Consider is there anything in these setups that can be moved to. a more central location (answer might be no)
4. Consider having docs on how to setup WP ENV for a new example
